Culinary Arts College has named The Cliff House at Pikes Peak in Manitou Springs No. 1 for its wine blog.

Written by Eric Ewers, cellar master at the Cliff House’s dining room, the blog is called  ”Wine Flights of Fancy.” Ewers writes four blogs, recommending wine pairings for everything from chocolate-covered strawberries to corned-beef sandwiches.

Built in 1874, the 54-room Cliff House is the second-oldest operating hotel in Colorado. Included in the National Registry of Historic Places, the hotel is also a member of the Historic Hotels of America and Conde Nast Johansens.

CAC is a nonprofit, which features more than 85 accredited culinary schools in the nation.
