Another popular Colorado Springs food truck operator has found a permanent location.
Liz Rosenbaum, owner of Her Story Café food truck hopes to open at 2356 S. Academy Blvd. by the end of April and will expand her soup and sandwich menu offerings to include breakfast.
She shared news Wednesday about her new location while selling soups and sandwiches from her food truck parked at the Boeing Building on the southwest corner of Platte Avenue and Wooten Boulevard.
Rosenbaum has been selling homemade soups and Paninis out of her truck for a little more than a year and has seen her business grow to the point where she felt she needed a fixed location to complement her roaming lunch truck.
“I have several corporate clients who want catering services,” she said.
And she’s been offering those services with great success. But that side of her business has outgrown her truck, she said.
“I’ve been looking really, really hard for a good location,” she said.
The new spot, near Academy and Astrozon Boulevard will be situated where a lot of her regular customers will be able to have breakfast and pick up a sack lunch for work, she said.
It’s the former location of restaurant Sabores del Peru and it’s a little bigger than what Rosenbaum started out looking for. It has seating and she expected a simple take-out location, she said.
But she’s confident she’ll be able to fill the seating. The food truck operations will continue as well, Rosenbaum said, though she may pause them temporarily while she prepares the new restaurant.
